Big knife block sets look impressive but most home cooks end up reaching for the same three or four blades. Here's what actually matters when choosing a set.
A santoku or chef's knife for general chopping, a utility knife for smaller tasks, a serrated knife for bread and tomatoes, and something like a nakiri for vegetables covers almost everything a home kitchen needs.
A sharpener bundled with the set is worth more long-term than an extra specialty knife you'll rarely use — a dull blade is both less effective and less safe.
It resists rust, is dishwasher-tolerant in a pinch (even if hand-washing is better for the edge), and holds up well without the maintenance high-carbon steel demands.
